This is due to the fact that this dish – historically speaking – utilizes pork shoulder. These are relatively inexpensive cuts of meat that naturally feature a lot of fat marbling. This allows pork shoulder to be a very “forgiving” choice of meat in that, if (safely) undercooked or (reasonably) overcooked, it’ll be tough, but it’ll remain tasty.
More importantly, pork shoulder doesn’t dry out as quickly as other pieces of meat. But, in order for all the fat to break down and contribute its flavor to the remaining meat, it must be cooked for longer periods of time at lower temperatures… And this is when the “magic” happens!
